These easy enchiladas with rotisserie chicken are great for meal prep and always a family favorite! Hi friends! Have you ever craved enchiladas but are intimated by the recipe process? I feel ya. Enchiladas seem like they would be a lot of work, but take my word for it, they can actually be quite easy to throw together with a few shortcuts. It’s actually one of my go-to crowdpleaser family meals; the girls go wild for them. These enchiladas with rotisserie chicken are my go-to for weekend meal prep. I make a large tray or two that can be stored in the fridge or freezer and be cooked up during the week. They also make the perfect meal to bring to friends or family who need an extra helping hand (new baby, feel-better food, etc.). A couple tricks I swear by to make enchilada making easy are 1) don’t make your own sauce (but if you want to, here’s my recipe), and 2) buy pre-cooked rotisserie chicken. Golden brown chicken meatballs cozied up next to fixings like cucumbers, shallots, kewpie mayo, mint, a bit of chili crisp, and some fresh cilantro to make the ultimate chicken sando! OKAY. How much do we love these meatballs? And this whole sandwich? It’s an 11/10 for me. THEY ARE SO GOOD. The meatballs are jam-packed with flavor, golden brown on the outside, and perfectly tender. What a dream. This whole thing comes together shockingly easy, especially if you use a little blitzer like this guy to mince all the meatball mix-ins! The meatballs will beg to be eaten straight out of the pan as an “appetizer” before you even get to the sandwich, but once you do get there, you can use any number of types of bread – soft French bread or baguette or pita, for example – to build the sandwich. This is essentially my recipe version of the Spotify Top 10 – showing off what was most made, most eaten, and most thought about in my food life this year. It’s hard to choose when you love all your children, but there were some clear favorites for me this year. Here’s my top 10 list of new recipes in 2022! This is an absolute burger-game changer that is quite literally smashed on a very hot griddle and quickly seared to a stunning crisp. Do not sleep on adding a swath of the zippy house sauce magic.
